I consider five basic food characteristics when pairing food and beverages. These five characteristics are known to complement wines well when the right bottle is chosen. Use this cheat sheet for your next meal for some tried and true yumminess

Bitter is notably missing. I haven’t found a wine that I enjoy with bitter food yet. In fact, bitter foods, like dark chocolate, are notoriously difficult to pair with wine (despite what marketers tell us!) I’m afraid this means I’ll just have to keep drinking wine and pairing it with food to find that wonderful pairing. So sad…
